Find an area with good traffic. From the technical aspects, focus on the possibility of installing a large wood-burning stove. This oven will be the heart of your pizzeria. Zoning the room, dividing it into a hall, kitchen, utility rooms and office. Draw up a project plan and a complete specification of furniture and necessary equipment.

Invite a chef. When hiring a specialist, pay special attention to places of previous work. Ideally, your chef should be Italian - the bearer of the culinary traditions of the region, or at least have lived in Italy for a long time. If it is not possible to attract such a chef, look for an applicant with good work experience in Russian establishments of a similar format. Do not save on the costs required to attract - the success of your future pizzeria depends to a large extent on the chef.

Develop recipes. As a rule, traditional types of pizza in Russian pizzerias coexist with author's. In which direction there will be an advantage (and whether it will be) - it's up to you to decide.
