Having your own cafe is a good start in the restaurant business. However, in order for the business to go right from the very beginning and not bring losses, it is necessary to write a clear business plan. It is especially important if you are attracting investors or applying for a government grant.

Instructions

Step 1

Choose a niche in which you will work. You can open an express cafe, an institution of national cuisine, a cafe specializing in the sale of a certain product, for example, grilled dishes or ice cream.

Step 2

In the introductory section of the business plan, describe in detail the type of cafe and its target audience. Indicate the organizational and legal form of the business. For catering, the most convenient is the status of an individual entrepreneur, which allows you to pay taxes according to a simplified scheme. Evaluate the degree of success of the project, the presence of competitors, the possible location.

Step 3

The next paragraph of the business plan should contain a detailed description of the project itself. Indicate the number of halls and places of your cafe, the estimated area of the dining area, kitchen and utility rooms, the opening hours of the enterprise. Describe how you intend to serve customers and what kind of cuisine you plan to offer them. The more accurately you draw the image of the future cafe, the clearer it will be both for you and for potential investors.

Step 4

In the “market analysis” section, indicate the number of potential competitors in the city and in the specific area where you plan to place the cafe. Describe the mistakes and achievements of these businesses and how they can be accounted for or removed

Step 5

Make a production plan. It should indicate what kind of premises you plan to purchase, rent or build. If a major overhaul or restoration of the building is required, be sure to check this box. Indicate your wishes for the design of the project and the necessary finishing materials.

Step 6

A very important point is the material support of the project. Calculate the amount of kitchen equipment you need. Plan the purchase and installation of a ventilation system, combi steamer, grill, electric stoves, washing equipment, cutting tables and cold rooms. Do not forget small appliances: a coffee machine, mixers, microwave ovens, slicers, and more. Count the right amount of furniture for the hall, decorative items, lamps, dishes, appliances and textiles.

Step 7

Develop a basic cafe menu based on its specialization. Decide if you will introduce business lunches, a special children's menu, bonuses and compliments for guests. Don't forget the alcohol card. A cafe offering lunch and dinner can have about 40 dishes on the menu, including snacks and desserts, and at least 50 drinks positions, including tea, coffee and alcohol. For ice cream parlors, hearty dishes can be excluded, but the range of desserts, non-alcoholic cocktails and coffee can be expanded.

Step 8

Calculate the required number of staff. For a cafe, you will need a director, four cooks (two per shift), the same number of waiters, a room cleaner and a dishwasher. It is possible to include an administrator and ancillary workers in the staff.

Step 9

Pay special attention to drawing up a financial plan. Calculate the costs of renting or buying premises, repairing them, and landscaping the adjacent territory. Write down the expenses for the design of the cafe, the purchase of equipment for the kitchen and hall, and the salaries of the staff. In a separate paragraph, write down how much you plan to spend on promotion and advertising.

Step 10

The last point is the estimated income of the enterprise. Calculate the time after which your cafe should become self-sufficient. Usually it does not exceed 10-12 months. Indicate the amount of the average bill, the planned load of the hall in the daytime and evening hours. Calculate an optimistic and pessimistic business development scenario and choose something in between.
